On this dreary day when this little kitten is in a world of not feeling so well, I am looking to fulfil the fire in my belly. What could be better than felafel?
This recipe is so easy and delicious and is perfect comfort food.
Take one cup of dried chickpeas and let them soak overnight. The next day, rinse and add them to a sauce pan and cover with water. Bring them to the boil and then simmer for about half an hour and then drain.
-OR- you can use a can of pre-cooked beans to make it a little easier.
Next, you need to soak half a cup of cracked wheat (also known as burgal) for twenty mins and then rinse. Bring that to the boil in a sauce pan with fresh water. Simmer for about twenty mins also. Drain. Next! Chop one onion and two cloves of garlic. Heat these in a saucepan with a dash of oil, until translucent. Add about two teaspoons of ground cumin and two teaspoons of ground coriander. Add all ingredients to a food processor and blend until it becomes quite thick and smooshy. Shape the mix into golf ball size pieces. Next, you can either fry them in some oil for about 4 mins each, or pop them in the oven for about 20 mins at 180 degrees Celsius or until cooked. They seem to come out a little dry if you bake them though. Have them with salad, hommous and pita bread, or just on their own. Yum!
