Seitan Sausages

                      Easy as Pie.
These little beauties are easy and fun to make. And you can change the spices to make the flavour anything you like. They are pretty easy to make too.

2 cups gluten flour,

1 cup stock or water,
1 tablespoon of soy sauce,
1 tablespoon tomato paste,
1 teaspoon of dried oregano,
1 teaspoon dried basil,
1 teaspoon of powdered garlic,
1 teaspoon of powered onion,
1 tablespoon of olive oil,
salt and pepper,

Mix these ingredients together in a bowl. The mixture will become like a dough, and quite stretchy. Knead for about five minutes and then wash the dough under some running water whilst kneading it a little for a couple of minutes. Doing this gets the starch out of the flour, making it more 'meaty' and a lot less rubbery. Divide the dough into four equal parts. Take four pieces of aluminium foil and roll these bits of dough into logs, in the aluminium, kinda like sushi. Try to get the aluminium as tight as possible. Twist the ends and put into a steamer for an hour. And that's it! How easy. I have two in the oven right now, wrappped in puff pastry, making sausage rolls. They are especially good on the BBQ, too.
