Vegan spaghetti bolognese, affectionately known as ' Spag Bol'.

Apparently, good ol' spaghetti is the most common food cooked in Australia. I don't often cooked pasta, but this is pretty tasty- and it's so much fun trying to suck up the noodles and not make too much mess. They do say not to eat spaghetti on a first date... For this recipe, you can pretty much add whatever veggies you have in the fridge. Here's what I did:
Slice one red onion and chop a clove of garlic. Sauté over medium heat until translucent-ish in some olive oil. Add 2 chopped carrots, 1 stick chopped celery, half a cup of chopped kale, one sliced yellow squash and one cup of sliced mushroom. Give it a quick stir and then add two cups of textured vegetable protein (tvp, veggie mince), and half a cup of kidney beans. Add 6 cups of water, and a jar of pasta sauce or tomato purée. Add 1 tablespoon of soy sauce, 1 teaspoon of dried basil, 1 teaspoon of oregano and one whole shittake mushroom.  The mushroom acts like a stock, basically. Bring to the boil, and then simmer for 45 mins or until cooked. Check the beans are cooked too. Remove the shittake mushroom, add some salt and pepper to taste. With the pasta, well.... I'm sure you know how to cook pasta.

  2. It is pretty quick. You can pretty much chuck it all in and leave it- just remember to stir it and check it has enough water in it. This made about 6 servings, so I put some of them in the freezer ready to go when I'm working late. :) have a great day!
