Vegan Not- Baked Beans

Tasty, tasty goodness! These beans are great at breakfast lunch or dinner- even snacks in between.
One sliced onion
One clove crushed garlic
One tablespoon olive oil
One sliced carrot
One sliced stick of celery
Two medium sized potatoes, sliced thickly
Two cups of cannellini or great northern beans
Four cups of stock
Two tablespoons of smoked paprika
Method in the madness:
In a large-ish saucepan, fry the onion and garlic in the olive oil over medium heat until translucent. Add the celery, carrot and potatoes and give it a stir. Add the beans and the paprika, stir gently. Add the stock and bring to the boil. Reduce the heat and simmer with the lid off for about forty minutes to an hour, until the liquid has reduced. Serve with crusty bread.

    Sometimes I think you read my mind. My children and I love baked beans. I buy the canned ones and make them what my children/husband call 'gourmet'. I've been looking for a 'from scratch' baked bean recipe I like the look of, for ages.
