So I was feeling like something different. Something with a little zing, tang, spice. Something to dip my celery stick into. Something exotic.
Half a cup of dried black beans,
One Roma tomato,
Three tablespoons of olive oil,
Two teaspoons of apple cider vinegar,
Juice of one lemon,
Three teaspoons of cumin,
Three tablespoons of fresh coriander/ cilantro,
Two cloves of garlic,
Salt and pepper.
Take the black beans and put them in a pot of boiling water. Bring to the boil and then simmer for roughly 40 minutes or until cooked. Strain these little beans of blackness and then add them to the blender along with all the other ingredients. All these ingredients look so beautiful next to each other. Turn the blender on medium to high for a few minutes, or until the dip has reached a consistency you like.
