Vegan Chickpea and carrot soup
I love carrot soup! Especially when I am poor. So sweet and filling, honesty I didn't even put onion or garlic in it and it was still so tasty.
About half an hour from start to finish.
3 carrots, roughly chopped.
A handful of cooked chickpeas.
Enough veggie stock to cover it all.
Put it all in a saucepan and bring to the boil.
Let simmer for about 20 minutes or until the carrots are soft.
Blend and serve.
Too easy! When I was really poor, I would only use carrots, stock and sometimes a little curry powder. Definitely a great recipe for Uni students!
